Pumpkin and Tomato Soup

Ingredients:

  1. 2 1/4 pounds - pumpkin Peel and chop in cubes
  2. 1 1/2 quarts - organic chicken broth gluten free
  3. 1/2 cups - tomato paste
  4. 1 - onion peeled and diced
  5. 2 teaspoons - garlic crushed
  6. 2 teaspoons - ginger grated and finely chopped
  7. 2 teaspoons - basil
  8. - salt and pepper to taste

Directions:

Peel and chop pumpkin.
In a large pot add pumpkin, and also all other ingredients, with the exception of the black pepper.
Bring the soup to the boil and simmer for approx 30 minutes or until pumpkin is tender.
Remove from the heat and puree soup until smooth in food processor or blender, stir in black pepper and serve.
