Ingredients:
- 2 pounds - chicken tenderloins about 10-12 pieces
- 1 packages - taco seasoning mix
- 1 jars - salsa about 12 oz.
- 1 cups - chicken broth
- 20 - tortillas
- 2 cups - shredded cheese
- 2 - whole tomatoes diced
- 3 cups - lettuce shredded or in bite-size pieces
- - sour cream and salsa for garnish
Directions:
Place chicken tenderloins in crockpot sprayed with cooking spray; sprinkle taco seasoning mix over top (or use chili seasoning, cumin, red pepper, garlic powder, and dried minced onion). Pour salsa and chicken broth over all.
Cook on medium heat for about 4 hours; use lower or higher heat for longer or shorter time frame depending on your needs. This heat and time frame gives good tenderness to the chicken.
When finished cooking, remove chicken from crockpot and use two forks to pull/shred chicken meat. Then add back to crockpot and stir.
Serve with flour tortillas, lettuce, tomatoes, and grated cheese for a complete taco experience!
