Pulled Chicken

Ingredients:

  1. 2 - onions thinly sliced
  2. 1 pounds - boneless, skinless chicken breasts
  3. 1/4 pounds - boneless, skinless chicken thighs
  4. 1 cups - ketchup
  5. 2 tablespoons - cider vinegar
  6. 1 tablespoons - Dijon mustard
  7. 2 tablespoons - molasses
  8. 1 teaspoons - onion powder
  9. 1 teaspoons - cumin
  10. 1/2 teaspoons - garlic powder
  11. 1/2 teaspoons - Tabasco
  12. 1/2 teaspoons - salt
  13. - whole-wheat hamburger buns optional

Directions:

1. Scatter onions on bottom of slow cooker. Arrange chicken on top of onions.

2. In a bowl, combine ketchup, vinegar, mustard, molasses, onion powder, cumin, garlic powder, Tabasco and salt. Pour over chicken. Cover and cook on low until chicken is fork-tender and sauce has thickened, about 5 hours.

3. Remove chicken from slow cooker and shred meat. Stir back into sauce. Serve hot, on whole-wheat buns, if desired.
