Prune Sour Cream Muffins

Ingredients:

  1. 2 tablespoons - sugar
  2. 2 tablespoons - finely chopped walnuts
  3. 1/4 teaspoons - cinnamon
  4. 2 cups - flour
  5. 1 1/4 cups - sugar
  6. 2 teaspoons - baking soda
  7. 1/4 teaspoons - salt
  8. 1 cups - chopped prunes
  9. 1/2 cups - chopped walnuts
  10. 1 - large egg
  11. 1 - egg yolk
  12. 1 cups - sour cream
  13. 6 tablespoons - butter melted
  14. 2 tablespoons - milk
  15. 1 tablespoons - vanilla

Directions:

Mix together topping ingredients and set aside.

Stir together flour, sugar, baking soda, and salt in a large bowl.

In separate bowl add prunes and walnuts; add beaten eggs, then sour cream, butter, milk and vanilla. Stir.

Mix together the flour mixture and prune mixture. Put in muffin tins (small amounts). Bake at 375 degrees F until done.

Top with crumbled topping before serving.
