Brief Description
Have roast boned and tied. This should be a several day process and I would recommend 3 full days for prep before cooking. Preparation minutes would be divided up between those days. Do not try this on less than 3 ribs. Cook time depends on weight.

Ingredients:
- 1 - Prime Rib
- 2 cups - Kosher Salt
- 3 packages - Cheesecloth
- 2 cups - Prime Rib Seasoning
- 1/2 cups - Soy Sauce
Directions:
Day 1- Rub Roast down with Kosher Salt. Wrap it in cheesecloth and place it in the fridge.
Day 2- Lightly wet roast with Soy Sauce. Sprinkle Prime Rib Seasoning heavily on to meat and work it in with your hands. Cover in a new cheesecloth and place back in the fridge.
Day 3- Cover in more Prime Rib Seasonings. Will be almost crust like. Cover in cheesecloth.
Day 4- If seasoning as soaked into the meat or rubbed off cover any big holes with seasoning. Leave on the counter for at least 2 hours until entire roast is room temperature. (This helps with the meat cooking more evenly).
Place roast, bone-side down, in heavy metal roasting pan with rack. Pre-heat the oven to 450 degrees. Once oven is heated place foil covered roast inside for 15 minutes and then turn it down to 325 and then cook. Time is dependent on weight and rib number.
make sure you use a digital thermometer. Middle of roast is Rare at 120-125; Medium Rare at 130-135; Medium at 140-145; Medium Well at 150-155; Well done at 160. Make sure over temperature is actually what it reads.
