Pressure Cooker Pulled Pork

Ingredients:

  1. 4 teaspoons - ground cumin
  2. 1 tablespoons - garlic powder
  3. 1 tablespoons - mustard powder
  4. 1 teaspoons - salt
  5. 1 teaspoons - ground thyme
  6. 3 pounds - pork shoulder roast - boneless/fat trimmed, cut into 2 inch pieces
  7. 1 cups - ketchup
  8. 1 - onion chopped
  9. 2 tablespoons - cider vinegar
  10. 2 tablespoons - molasses
  11. 1 tablespoons - Worcestershire sauce
  12. 1 tablespoons - packed dark brown sugar
  13. 1/2 teaspoons - pepper
  14. 6 - hamburger buns for serving
  15. - sweet gherkins for serving

Directions:

In a pressure cooker, combine the cumin, garlic powder, mustard, salt and thyme. Add pork pieces; toss to coat.

Stir in ketchup, onion, vinegar, molasses, Worcestershire, sugar and pepper. Cover with pressure cooker lid.

Over medium-high heat, bring cooker to pressure according to manufacturer's directions. Reduce heat to medium; cook, maintaining pressure, for 40 minutes.

Remove from heat; release pressure according to manufacturer's directions. Remove lid; with 2 forks pull meat apart into shreds.

Fill buns with pork mixture; serve with gherkins.
