Prawn & Orange Salad

Ingredients:

  1. 3/4 cups - cider vinegar
  2. 1/4 cups - light olive or veg. oil
  3. 1/4 cups - lemon juice
  4. 2 tablespoons - catsup
  5. 2 tablespoons - nutrasweet
  6. 2 tablespoons - parsley or cilantro minced
  7. 2 tablespoons - mustard seed
  8. 1/2 tablespoons - capers drained
  9. 2 - cloves garlic
  10. 1/4 teaspoons - celery seed
  11. 1/4 teaspoons - pepper
  12. 1/2 pounds - large shrimp deveined, shelled, cooked
  13. 3 - oranges peeled, cut into sections
  14. 1 - medium onion thinly sliced
  15. - lettuce leaves
  16. 3/4 cups - cider vinegar
  17. 1/4 cups - light olive or veg. oil
  18. 1/4 cups - lemon juice
  19. 2 tablespoons - catsup
  20. 2 tablespoons - nutrasweet
  21. 2 tablespoons - parsley or cilantro minced
  22. 2 tablespoons - mustard seed
  23. 1/2 tablespoons - capers drained
  24. 2 - cloves garlic
  25. 1/4 teaspoons - celery seed
  26. 1/4 teaspoons - pepper
  27. 1/2 pounds - large shrimp deveined, shelled, cooked
  28. 3 - oranges peeled, cut into sections
  29. 1 - medium onion thinly sliced
  30. - lettuce leaves

Directions:

1. Combine shrimp, oranges and onion in a glass bowl.
2. Mix marinade ingredients and pour over shrimp bowl. Mix and toss.
3. Refrigerate, covered, for 2-4 hours.
4. Arrange lettuce in serving bowl or on plates. Spoon salad over lettuce.
