Ingredients:
- 2 - medium potatoes pared and thinly sliced
- 1 - medium onion sliced
- 1 packages - frozen chopped spinach thawed and drained
- 3/4 cups - Bisquick baking mix
- 1 3/4 cups - milk
- 1/2 cups - shredded cheddar cheese
- 2 - eggs
- 3/4 teaspoons - salt
- 1/2 teaspoons - Italian seasoning
- 1/8 teaspoons - pepper
Directions:
Heat oven to 350° F. Grease rectangular baking dish, 12 by 7.5 by 2 inches.
Layer potatoes in dish; top with onion. Mix remaining ingredients together; pour over top.
Bake until potatoes are tender, about 35 minutes.
