Potatoes Florentine

Ingredients:

  1. 2 - medium potatoes pared and thinly sliced
  2. 1 - medium onion sliced
  3. 1 packages - frozen chopped spinach thawed and drained
  4. 3/4 cups - Bisquick baking mix
  5. 1 3/4 cups - milk
  6. 1/2 cups - shredded cheddar cheese
  7. 2 - eggs
  8. 3/4 teaspoons - salt
  9. 1/2 teaspoons - Italian seasoning
  10. 1/8 teaspoons - pepper

Directions:

Heat oven to 350° F. Grease rectangular baking dish, 12 by 7.5 by 2 inches.

Layer potatoes in dish; top with onion. Mix remaining ingredients together; pour over top.

Bake until potatoes are tender, about 35 minutes.
