Ingredients:
- 3 slices - bacon
- 1 cups - onion chopped
- 3 pounds - potatoes peeled and cut into 1/4 inch thick slices
- 1/2 cups - water
- 2 cans - chicken broth
- 1/2 teaspoons - salt
- 1/2 teaspoons - pepper
- 2 cups - milk
- 4 ounces - shredded cheddar cheese
- 1/2 cups - sour cream
Directions:
Cook bacon until crisp. Remove and crumble. Add onion to 2 tsp of the drippings in pan. Saute 3 minutes or until tender.
Place potatoes and onion in crockpot coated with cooking spray. Combine 1/2 cup water, broth, salt & pepper; stir into mixture in crockpot. Cover and cook on low 8 hours.
Mash mixture; stir in milk and 3/4 cup cheese. Increase heat to high. Cover and cook 20 minutes or until mixture is heated. Ladle soup into bowls.
