Potato, Pepper, Kielbasa Casserole

Ingredients:

  1. 2 - large bell peppers (red or green) cut into strips
  2. 2 - medium onions cut into wedges
  3. 1 pounds - red-skin potatoes
  4. 12 ounces - Kielbasa cut into 1/2-inch pieces
  5. 1/4 teaspoons - salt and pepper
  6. 1/4 cups - olive oil
  7. 1 cups - heavy cream
  8. - Parmesan for topping

Directions:

Combine peppers, onion, potatoes and Kielbasa with salt and pepper and oil.

Place in 1-1/2 quart covered casserole and bake at 350 degrees F for 1 hour.

Pour in cream and bake 10 minutes longer. Sprinkle with Parmesan.
