Brief Description
When we were kids, my siblings and I would compete to see who could eat the most kugel at Chanukah. My family loves it so much that I now make it for Thanksgiving too. It's best with homemade applesauce.

Ingredients:
- 1 - large mild onion
- 4 - large eggs
- 6 tablespoons - olive oil
- - salt and pepper to taste
- 3 pounds - Yukon Gold potatoes

Directions:
Preheat the oven to 350º
Brush a wide, shallow baking dish with oil. Grate the onion (easy to do in food processor).
In a large bowl, lightly beat the eggs with the salt and pepper, the olive oil, and the grated onion. Peel and grate the potatoes and stir them quickly into the egg mixture before they start to discolor. Pour the mixture into your prepared baking dish. Bake for about an hour, then turn the heat up to 450º for 5 to 10 minutes to brown the top.
Serve hot with applesauce (preferably homemade!), sour cream, or plain Greek yogurt.
