Ingredients:
- 6 whole - Medium Potatoes
- 1/2 sticks - Butter
- 2 cups - Cheddar Cheese
- 2 cups - Sour Cream
- 1/3 cups - Green Onions optional
- 1 teaspoons - Salt
- 2 tablespoons - Butter
- 1/4 teaspoons - Pepper
Directions:
Cook unpeeled potatoes in boiling water until tender, about 20-25 minutes, depending on size of potato; let cool, then peel (or not, if you prefer), and coarsely shred.
In saucepan over low heat, combine the cheese and 1/2 stick of butter, stirring until melted. Remove from heat. (Or use a microwave safe bowl and heat cheese and butter in microwave for 30 second increments until melted). Blend in sour cream, onions, salt, and pepper. Add potatoes, stirring lightly. Turn into 2 quart casserole dish. Dot with the 2 tablespoons of butter.
Bake for 25 minutes at 350.
