Post's Cranberry Orange Nut Bread

Ingredients:

  1. 2 cups - all-purpose flour
  2. 1 cups - sugar
  3. 1/2 tablespoons - salt
  4. 1/2 teaspoons - baking soda
  5. 1 1/2 teaspoons - baking powder
  6. 1 tablespoons - to 2 Tbsp. grated orange peel
  7. 2 teaspoons - orange extract
  8. 1 - large egg
  9. 2 tablespoons - butter
  10. 3/4 cups - orange juice
  11. 1 teaspoons - vanilla extract
  12. 1 cups - cranberries
  13. 1/2 cups - chopped walnuts

Directions:

1. Cut cranberries in half and chop walnuts.

2. Heat oven to 350° Fahrenheit.

3. Grease a 9x5x3 loaf pan.

4. Blend all dry ingredients.

5. Mix in butter, orange peel/rind, orange juice, orange extract, vanilla extract and egg.

6. Fold in cranberries and chopped walnuts.

7. Pour into pan.

8. Bake for one hour. A toothpick should be clean if you insert and remove into the bread. If not, bake for 5-
10 more minutes.

9. Cool thoroughly before slicing.

10. Enjoy.
