Careful to adjust the Pasilla's based on heat... Use a small can a tomato paste if you like a thicker Chili or finish with a couple tablespoons of corn starch slurry

Ingredients:
- 2 cans - Chili Beans in Sauce
- 1 cans - Black Beans washed/drained
- 1 cans - White Beans washed/drained
- 2 cans - Chopped Stewed Tomatoes fire roasted
- 1 cans - Tomato Juice 8.5 oz
- 3 whole - White/Yellow Onions chopped
- 3 whole - Pasilla Chilis roasted/chopped
- 2 whole - Green Peppers chopped
- 3 pounds - Ground Beef 90/10
- 1 pounds - Seasoned Ground Pork
- 1 bottles - Black Butte Porter 1/2 begin. + 1/2 end
- 1 bunches - Cilantro Chopped
- 1/2 teaspoons - Cumin
- 1/2 teaspoons - Chili Powder
- 1/4 teaspoons - Smoked Paprika
Directions:
Prep:
Roast Pasilla Chilis until dark and blistered - let rest and then chop
Chop onions
Chop Cilantro
Saute beef and pork - strain and put aside
Cook:
- In the slow-cooker or dutch oven -
Layer chopped vegetables and spices (salt/pepper to taste) on the bottom with a small amount of oil. Followed by canned beans and tomatoes and finish with ground meat. Pour in 1/2 porter and tomato juice.
Cook on HIGH for 2 hours - stir mixture
Resume cooking on LOW for 2 hours - stir in last 1/2 porter, salt/pepper to taste and a half bundle of cilantro
Serve with garnish of cilantro/lime wedges/chopped onion/Smoked Cheddar
