Ingredients:
- 650 grams - Fresh, lean Pork mince
- 1 tablespoons - Thai Fish Sauce
- 5 - Fresh Red Bird's Eye Chillies
- 3 - Garlic Cloves
- 3 tablespoons - Sunflower Oil
- 1 tablespoons - Soft Brown Sugar
- 2 tablespoons - Dark Soy Sauce
- 2 tablespoons - Oyster Sauce
- 2 tablespoons - Chicken Stock 1 to 2 Tablespoons of chicken stock may be needed.
Directions:
1. Mix the pork and fish sauce together and leave to marinate for 10mins (or longer if preferred).
2. Halve & partially sear the chillies. Pound the chillies and garlic together to make a paste. Heat the oil in a wok. Add the pork and chilli paste and stir fry over a high heat for 2-3mins or until the meat has fully browned.
3. Add the sugar, soy sauce & oyster sauce and cook, stirring constantly for 3-4mins or until pork is cooked. If the mixture seems too dry or about to scorch, add the stock.
4. Serve with boiled rice.
