Ingredients:
- 2 whole - Pork Tenderloins
- 1 cups - Mushrooms Sliced
- 1/3 cups - Finely chopped onion
- 1 whole - Monarch Chicken crisp coating mix
- 1/3 cups - Coarsley chopped cashews
- 1/4 cups - Chopped parsley
Directions:
-Preheat oven to 350 degrees
- Split pork tenderloins leaving uncut 2 pork tenderloins
- Spread each loin apart and pound to an even 3/4 thickness
- In a small frying pan melt 1/3 cup butter and add mushrooms & onion
- Cook until onion is transparent
- In a bowl combine coating mix, cashews, parsley, mushroom/onion mixture
- Place stuff on one tenderloin. Top with second tenderloin. Tie with string and wrap in aluminum foil. Place in a shallow pan. Bake in pre-heated 350 oven for 60 - 75 minutes. Loosen and fold back foil. Bake an additional 15 minutes or until meat is browned and tender.
Makes 6-8 servings.
