Prepping shrimp - before mincing shrimp cover with kosher salt and mix thoroughly for a couple of minutes, the shrimp will froth and foam. Then rinse with water, this helps make the shrimp kind of snap rather than mushy. Then mince with food processor or by hand. I feel that sometimes the food processor pulverized the ingredients too much....but good for shitakii, ginger, garlic. I like the texture of having bigger chunks of water chestnut and shrimp...but do it as you like.

Ingredients:
- 2 tablespoons - corn starch
- 2 tablespoons - water
- 1/2 teaspoons - sugar to taste
- 2 packages - wonton wrappers
- 1 pounds - ground pork
- 20 whole - raw shrimp 20 to 24 peeled and minced
- 1/2 logs - inch nob of ginger grated/minced
- 1 cans - water chestnut minced
- 1/4 cups - dried shredded black fungus mushroom soaked and minced
- 3 cloves - garlic 3 to 4 minced
- 3 bunches - green onion chopped
- 2 tablespoons - shaoxing wine or rice vinegar
- 2 tablespoons - soy sauce
- 1/2 teaspoons - sesame oil
- 1 pounds - ground pork
- 20 whole - raw shrimp 20 to 24 peeled and minced
- 1/2 logs - inch nob of ginger grated/minced
- 1 cans - water chestnut minced
- 1/4 cups - dried shredded black fungus mushroom soaked and minced
- 3 cloves - garlic 3 to 4 minced
- 3 bunches - green onion chopped
- 2 tablespoons - shaoxing wine or rice vinegar
- 2 tablespoons - soy sauce
- 1/2 teaspoons - sesame oil
- 2 tablespoons - corn starch
- 2 tablespoons - water
- 1/2 teaspoons - sugar to taste
- 2 packages - wonton wrappers
Directions:
Place ground pork in a large mixing bowl
Place ginger, garlic, black fungus, water chestnut in food processor to mince. Place water chestnut in last and pulse if prefer larger chunks. Add mixture to mixing bowl.
Add chopped green onions, shaoxing wine, soy sauce, sesame oil, cold water, corn starch, and sugar to mixing bowl and mix well. The sugar is to help tenderize the meat, add additional if needed.
Heat a small amount to taste and season as needed.
Place mixture in refrigerator to marinate for about 1 hour.
Prep shrimp and add to mixing bowl right before wrapping the wontons.
