Pork Rib Rub

Ingredients:

  1. - ribs
  2. 3 cups - fine sugar
  3. 2 1/2 cups - paprika
  4. 1 cups - chili powder
  5. 1 1/2 tablespoons - cayenne pepper
  6. 1 cups - granulated garlic
  7. 2 tablespoons - onion powder
  8. 2 tablespoons - pepper
  9. 1 cups - kosher salt
  10. 1 1/2 tablespoons - dry mustard
  11. 1 tablespoons - cumin
  12. - mustard

Directions:

1) Take off membrane.

2) Season both sides.

3) Smear w/ mustard.

4) Cover and refrigerate over night.

5) Cook at 220° for 2 hours and then @ 230° for 3 hours.

6) Take off, rub lightly again and then sauce both sides.
