Pork Marinated in Vinegar

Ingredients:

  1. 3 pounds - Pork loin, rack of pork or pork chops
  2. 1/2 cups - Champagne Vinegar
  3. 2 tablespoons - Chili or Chipotle Olive Oil
  4. 2 1/2 pounds - Potatoes
  5. - Dry White Wine
  6. - Hawaiian Red or Black Sea Salt

Directions:

Place the pork in a baking dish or bowl. Combine the vinegar and oil and drizzle over the pork. Marinade at room temperature for 3 hours, turning occasionally.

Meanwhile, par-boil the potatoes and quarter them when done.

Rub the pork with the salt and roast for 30 minutes basting with the marinade. Add the potatoes to the roasting pan. Continue to roast for another hour or until the pork is done, basting occasionally.

Let the pork rest for 15 minutes before slicing.
