pork apple and pistachio sausage rolls

Ingredients:

  1. 1 tbles - olive oil
  2. 1 - red onion
  3. - sea salt and pepper
  4. 2 cloves - minced garlic
  5. 500 grams - lean pork mince
  6. 100 grams - pistachios chopped peeled, cored and grated
  7. 2 - green apples
  8. 2 tbles - whole grain mustard
  9. 1 tbles - cider vinegar
  10. tbles - Italian parsley
  11. 6 sheets - puff pastry
  12. 1 - egg mixed with tbles milk
  13. handful - poppy seeds

Directions:

Preheat oven 200c
Heat oil in large pan. Add onion and pinch salt and sauté 5 mins until soft and translucent. Add garlic and sauté another 5 mins, stirring occasionally. Allow to cool completely.

Place pork in bowl, add pistachio, Apple, mustard, vinegar and parsley and the cooled onion and garlic. Season and mix well with hands.

Cut pastry sheets into six pieces. Put small amount of mixture on each sheet and roll up. Put seam side down on lined tray.

Brush with egg and milk mixture and sprinkle with poppy seeds.

Bake 30 mins until golden and crispy
