Scrambling will start to oxide the cholesterol in the egg. Poaching or soft boiling are better at preserving the nutrition.

Ingredients:
- 4 ounces - vinegar
- 1 - egg
- - water
Directions:
Heat water in a skillet until bubbles start to form on the bottom skillet surface. Add the vinegar to the water to “set the egg” and keep it from spreading out too much. Crack egg open and pour it into the vinegar water.
Do not let the water boil rapidly as that action can tear up the egg. Cook for approximately 5 minutes until the egg yolk is the desired consistency – should be slightly runny for optimal nutrition.
Remove from the vinegar water. (A spoon with holes works great.)
Rinse (so there’s no vinegar taste unless you like that) and serve.
