Plum Good Pumpkin Pound Cake

  1. 2 tablespoons - spoonable stevia
  2. 1 cups - canned pumpkin
  3. 2/3 cups - spoonable stevia
  4. 1 teaspoons - baking powder
  5. 1 teaspoons - vanilla
  6. 1/2 teaspoons - pumpkin pie spice
  7. 5 - large eggs
  8. 2 cups - almond


1. Preheat oven to 350 degrees and spray a loaf pan with cooking spray.  Once you have sprayed it, sprinkle the 2 TBSP of the stevia  into the pan and set it aside.

2. Beat pumpkin, baking powder, vanilla, and pumpkin pie spice until smooth. Beat in eggs and almond flour.  If needed, add a little water to make it a thick but pourable batter.

3. Pour into prepared pan and bake 1 hour to 1 hour 15 minutes.  The cake is done when it has pulled away from the sides of the pan and a toothpick inserted near the middle comes out clean.

4. Top with freshly whipped cream to serve.
