Plaza III Steak Soup

Ingredients:

  1. 1 pounds - chopped round steak
  2. 1/2 pounds - oleo or margarine
  3. 1 cups - flour
  4. 8 cups - water
  5. - fresh ground pepper to taste
  6. 1 pounds - carrots diced
  7. 1 - medium onion diced
  8. 1 stalks - celery diced
  9. 1 packages - frozen mixed vegetables
  10. 1 cans - tomatoes large can
  11. 4 tablespoons - beef bouillon

Directions:

Make a roux - melt oleo in a large pan, stir in flour and gradually add 2 cups of the water. Stir until smooth.

Add all other ingredients except steak and set aside.

In another pan, saute chopped round steak in 2 tablespoons of oleo or butter until browned. Drain off grease.

Add meat to first mixture and simmer, stirring occasionally, for 1-1/2 hours or until vegetables are tender. If soup needs thickening, add more roux.
