Notes:
The first time I made this I let it go 48 hours or a bit longer and it was quite tart! Next time I plan to try it at 36 hours. I also may use all the liquid from both cans and thicken it up after it is made with chia seeds...just a thought, I will update as I experiment.

Ingredients:
- 2 cans - Coconut milk
- 1 - Probiotic capsule
Directions:
If you don't have a large dehydrator preheat your oven on its lowest setting. Open your coconut milk cans and drain the thin liquid from one or both depending on how thick you'd like your final product (I just pour off the thinner milk from one can and use the other can as is). Save the thin coconut milk to use elsewhere. Using a wire whisk mix the creamy coconut milk together with the contents of one opened probiotic capsule. (a quarter to a half teaspoon of probiotic powder). Pour into a covered glass dish and if using oven turn it off before setting the dish inside. If using dehydrator, remove screens and set dish on bottom of dehydrator -turn heat to 105°. Allow yogurt to ferment for 24 to 48 hours depending on how tart you like it.
