Pizza Dip with Grape Tomatoes

Ingredients:

  1. 2 cups - grape tomatoes halved
  2. 5 teaspoons - olive oil divided
  3. 2 cloves - garlic minced
  4. 8 ounces - cream cheese softened, room temp.
  5. 10 ounces - mozzarella cheese shredded
  6. 6 tablespoons - parmesan cheese
  7. 1/4 cups - basil leaves roughly chopped
  8. - salt and pepper to taste
  9. 1 pinchs - dried oregano

Directions:

Preheat oven to 425 degrees F. Line a baking sheet with aluminum foil. Place tomato halves on top; sprinkle with 2 tsp olive oil and salt; then bake for 12-17 minutes. Remove from oven and set aside.
While tomatoes are roasing, mix softened cream cheese with mozzarella and 4 tbsp of parmesan cheese. Stir in fresh basil, garlic, oregano, salt and pepper; mix well to combine.
Place tomatoes at bottom of a baking dish and top with cheese mixture. Sprinkle with remaining parmesan and sprinkle 1 tbsp of olive oil on top. Bake for about 20 minutes, or until top is golden and bubbly.
Serve immediately with crackers, chips or toasted crusty bread.
