Pistou Country French Vegetable Soup

Ingredients:

  1. 2 quarts - water
  2. 1 cups - dry white beans
  3. 2 - potatoes peeled, diced
  4. 1/2 pounds - fresh green beans snapped
  5. 1/4 cups - dried basil
  6. 2 - onions sliced
  7. 1/4 cups - olive oil
  8. 3 - tomatoes (OR a 16 oz. can of tomatoes) peeled
  9. 1 cans - 8 oz. tomato sauce only if using fresh tomatoes; omit if using canned tomatoes
  10. 2 - zucchini sliced
  11. 2 tablespoons - salt or less to taste
  12. 1 tablespoons - pepper
  13. 1/4 cups - parsley chopped

Directions:

1. In a large kettle, bring water to a boil. Add white beans; boil 2 minutes. Reduce heat and simmer, covered, for 1 and 1/2 hours.

2. Add potatoes, snapped green beans, basil and some garlic; simmer 15 minutes.

3. Sauté onions in olive oil until golden; add to soup along with tomatoes, tomato sauce (if using fresh tomatoes), zucchini, salt and pepper. Simmer, covered, for 15 minutes.

4. Just before serving, sprinkle top with parsley.
