Ingredients:

  1. 3 cups - flour
  2. 3 1/2 teaspoons - baking powder
  3. 3/4 teaspoons - salt
  4. 2/3 cups - butter
  5. 2 teaspoons - almond extract
  6. 1 1/2 cups - sugar
  7. 1 1/4 cups - milk
  8. 5 - egg whites
  9. 1/2 cups - sugar
  10. 3/4 cups - pistachio nuts chopped
  11. 1 cups - cream scalded
  12. 1/2 cups - cream plain
  13. 1/3 cups - sugar
  14. 2 1/2 tablespoons - flour
  15. 1/4 teaspoons - salt
  16. 3 - egg yolks
  17. 1 tablespoons - butter
  18. 1 teaspoons - vanilla
  19. 1/2 teaspoons - pistachio extract
  20. - tint with green coloring
  21. 1/2 cups - salted pistachio nuts chopped
  22. 1 1/2 cups - sugar
  23. 1/3 cups - water
  24. 1 tablespoons - white corn syrup
  25. 1/8 teaspoons - salt
  26. 2 - egg whites unbeaten
  27. 1 teaspoons - pistachio extract
  28. - tint with green coloring

Directions:

Cake:

Combine flour, baking powder, salt; sift and set aside.

Cream together butter with almond extract, gradually adding sugar. Beat adding alternately above dry mixture with milk. Set aside.

Beat egg whites until frothy; gradually add 1/2 cup sugar, and beat until stiff peaks form. Place egg white mixture on above mixture and fold.

Bake in two 9-inch cake pans at 350 degrees F for 25 to 30 minutes.

Cream Filling:

In a sauce pan sift together sugar, flour and salt. Blend in 1/2 cup of plain cream; gradually add scalded cream. Bring to a boil and cook for 3 minutes.

Remove from heat; put in double boiler and cook with cover for 5 to 7 minutes, stirring 3 or 4 times.

Beat egg yolks; add 3 tablespoons of above mixture, then add this to remainder of above mixture. Cook for 3 to 5 minutes.

Remove from heat; blend in butter, vanilla, pistachio extract and green coloring. Cool. Add nuts; chill and spread on cake.

7 Minute Frosting:

In a double boiler, combine sugar, water, corn syrup, salt and egg whites. Place over simmer water and beat while simmering with rotary beater until stiff peaks form.

Remove from heat; blend in pistachio extract and green coloring.

Frost cake and sprinkle nuts over frosting.
