Ingredients:
- 5 tablespoons - Ghee Butter Melted
- 1 1/4 cups - Yellow Cornmeal
- 1/2 cups - Brown Rice Can use White
- 1/3 cups - Tapioca Flour
- 3 tablespoons - Potato Starch
- 1/4 teaspoons - Xanthan Gum
- 1 tablespoons - Cane Sugar
- 2 teaspoons - Baking Powder Gluten Free
- 1 teaspoons - Baking Soda
- 1 teaspoons - Chili Powder
- 1 teaspoons - Sea Salt
- 3/4 teaspoons - Ground Cumin
- 1 - Duck Egg Beaten
- 1 1/2 cups - Grated Cheese Old Cheddar
- 3/4 cups - Buttermilk
- 1/2 cups - Milk
- 1/4 cups - Fresh Italian Parsley
- 2 - Jalapenos Minced
- 1/2 - Medium White Onion Minced
- 1/2 - Red Pepper
Directions:
Heat oven to 400*.
Grease 8 inch square baking Pan; Set aside. Whisk cornmeal, rice flour, tapioca flour, potato starch, xanthan gum, cane sugar, baking powder and baking soda, chili powder, salt, and cumin in a bowl. in another bowl, whisk together mixture into flour mixture; pour into pan smooth with a rubber spatula. Bake for 35-40 minutes.
