Pineapple Raspberry Bellini

Ingredients:

  1. 2 cups - raspberries
  2. 2 cups - pineapple juice
  3. 1 teaspoons - pure vanilla extract
  4. 1 bottles - 750 ml chilled brut sparkling white wine
  5. 1 cups - chilled seltzer
  6. - raspberries for garnish

Directions:

Blend raspberries, pineapple juice and vanilla extract until smooth.

Strain mixture through a fine-mesh sieve, pressing on solids; pour into a pitcher.

Top with chilled white wine. Allow foam to settle, then top with chilled seltzer and stir gently to combine.

Put a few raspberries in each glass, pour and serve.
