Pineapple party salad

Ingredients:

  1. 27 ounces - canned crushed pineapple smaller can is prob appropriate
  2. 1 packages - lemon-flavored gelatin
  3. 1 packages - lime-flavored gelatin
  4. 1/4 teaspoons - salt
  5. 1 cups - dry cottage cheese
  6. 1 cups - mayonnaise
  7. 1/2 cups - pecans original recipe calls for almonds, blanced and chopped

Directions:

Drain syrup from pineapple. Recipe calls for size 2 1/2 can, but that sounds like too much. Add enough water to syrup to make 2 cups. Heat to boiling point. Dissolve lemon and lime gelatin in boilingn liquid. Add salt. Cool until slightly thickened. When beginning to congeal, fold in cottage cheese, mayonnaise, crushed pineapple, and nuts. Pour into mold, or 9" square pan. Place in refrigerator to chill and set. Serve on lettuce leaf, topped with a touch of mayonnaise. Serves 10-12.
