Pineapple Filled Cookies

Ingredients:

  1. 1 cans - crushed pineapple
  2. 2 tablespoons - cornstarch
  3. - sugar to sweeten
  4. - a little pineapple juice to mix with cornstarch
  5. 1 cups - sugar
  6. 1/2 cups - shortening
  7. 1 - egg
  8. 1/2 cups - milk
  9. 3 1/2 cups - flour
  10. 2 teaspoons - cream of tartar
  11. 1 teaspoons - baking soda
  12. - pinch of salt
  13. 1 teaspoons - vanilla
  14. 1 cans - crushed pineapple
  15. 2 tablespoons - cornstarch

  17. - a little pineapple juice to mix with cornstarch
  18. 1 cups - sugar
  19. 1/2 cups - shortening
  20. 1 - egg
  21. 1/2 cups - milk
  22. 3 1/2 cups - flour
  23. 2 teaspoons - cream of tartar
  24. 1 teaspoons - baking soda
  25. - pinch of salt
  26. 1 teaspoons - vanilla

Directions:

Filling:
Mix cornstarch with a little pineapple juice before adding to pineapple and sugar; cook and cool.

Dough:
Sift together flour, cream of tartar, baking soda and salt; set aside.

Cream shortening and sugar together; add egg. Add flour mixture alternately with milk. Knead until smooth.

Roll thin. Use cookie cutter or small glass to make rounds.

Put small amount of filling mixture on one round; cover with another. Press around edges with fork to seal. Pierce top with fork.

Bake on ungreased sheet or one covered with foil in moderate oven until lightly browned (can sprinkle with sugar first).
