Pineapple Cake

Ingredients:

  1. 2 cups - flour
  2. 2 cups - sugar
  3. 2 - eggs
  4. 2 teaspoons - baking soda
  5. 20 ounces - crushed pineapple with juice
  6. 1 cups - chopped pecans or walnuts
  7. 1 1/2 teaspoons - vanilla
  8. 1/4 teaspoons - salt
  9. 8 ounces - cream cheese
  10. 8 tablespoons - butter at room temperature
  11. 2 cups - powdered sugar

Directions:

For Cake:

Preheat oven to 350 degrees F. Grease 9-x-13-inch baking pan.

In a large bowl, mix together all cake ingredients. Pour batter into prepared pan. Bake 35 minutes; cool.

Frost with Cream Cheese Icing:

Beat icing ingredients together until smooth. (May make ahead & keep in refrigerator for up to 2 days). Frost cake. Bring to room temperature before serving.
