Pineapple Banana Hummingbird Mini Loaves

Ingredients:

  1. 1 packages - yellow cake mix
  2. 1 packages - vanilla flavor instant pudding 3.4 oz.
  3. 4 - eggs
  4. 1/4 cups - vegetable oil
  5. 1 teaspoons - ground cinnamon
  6. 1 cans - Dole crushed pineapple - 2o oz. juice drained, 1 cup reserved
  7. 2 - medium ripe bananas well mashed (1 cup)
  8. 1/2 cups - chopped pecans
  9. 2 ounces - cream cheese softened
  10. 1 tablespoons - milk
  11. 1/2 cups - powdered sugar

Directions:

Preheat oven to 350ºF.
Combine cake mix, dry instant pudding, and cinnamon in large mixer bowl; add reserved pineapple juice, eggs and oil and mix for 2 minutes, or until blended. Add crushed pineapple, bananas and nuts; mix just until blended.

Pour prepared batter into 5 foil mini loaf pans or two 8-inch or 9- inch loaf pans sprayed with nonstick cooking spray. Bake 40 minutes, or until toothpick inserted in center of cake comes out clean. Cool completely.

Meanwhile, make Cream Cheese Glaze: Combine 2 oz. softened cream cheese with 1 tablespoon milk and 1/2 cup powdered sugar; drizzle over cooled loaves.

Garnish with additional chopped pecans, if desired.
