Pineapple Banana Cake

Ingredients:

  1. 3 cups - flour
  2. 2 cups - sugar
  3. 3 - eggs
  4. 1 1/2 cups - vegetable oil
  5. 1 cups - coconut
  6. 1 teaspoons - baking soda
  7. 1 teaspoons - salt
  8. 1 cans - crushed pineapple 8 oz.
  9. 1 teaspoons - cinnamon
  10. 1 teaspoons - vanilla
  11. 2 cups - mashed bananas

Directions:

Preheat oven to 350°F. Grease a tube or Bundt pan or spray well with non-stick spray. Dust lightly with flour, tapping out excess.
In a large bowl, whisk together dry ingredients (flour, sugar, baking soda, salt, cinnamon) until no streaks remain.
Make a well in the center and add eggs, pineapple, coconut, oil, vanilla and bananas.
Stir batter (do not beat), mixing well. Some lumps can remain in batter; do not overmix.
Bake cake in preheated oven until a toothpick inserted in center comes out clean (about 65-75 minutes).

Cool on wire rack for 5 minutes before removing cake from pan.
