If desired to serve with a glaze, mix a cup of powdered sugar with 1/2 tsp of vanilla, and 1-2 tablespoons of milk, until desired drizzling consistency is reached.

Ingredients:
- 3 cups - flour
- 2 cups - sugar
- 3 - eggs
- 1 1/2 cups - vegetable oil
- 1 cups - coconut
- 1 teaspoons - baking soda
- 1 teaspoons - salt
- 1 cans - crushed pineapple 8 oz.
- 1 teaspoons - cinnamon
- 1 teaspoons - vanilla
- 2 cups - mashed bananas
Directions:
Preheat oven to 350°F. Grease a tube or Bundt pan or spray well with non-stick spray. Dust lightly with flour, tapping out excess.
In a large bowl, whisk together dry ingredients (flour, sugar, baking soda, salt, cinnamon) until no streaks remain.
Make a well in the center and add eggs, pineapple, coconut, oil, vanilla and bananas.
Stir batter (do not beat), mixing well. Some lumps can remain in batter; do not overmix.
Bake cake in preheated oven until a toothpick inserted in center comes out clean (about 65-75 minutes).
Cool on wire rack for 5 minutes before removing cake from pan.
