Havarti is easier to grate if placed in the freezer for 30 minutes before grating.

Ingredients:
- 1 cloves - garlic peeled
- 1 - small jalapeno or serrano chile stemmed, seeded and cut in 4 to 5 pieces
- 3/4 cups - mayonnaise
- 5 ounces - grated smoked Gouda cheese
- 4 ounces - grated cheddar cheese
- 4 ounces - grated Havarti cheese see note
- 1/3 cups - sour cream
- 1/3 cups - chopped pimentos
- - several sprigs fresh parsley or cilantro optional
Directions:
Using a food processor fitted with the metal blade, start the machine and drop the garlic and jalapeno through the feed tube to process. Add mayonnaise, Gouda and grated cheeses to the food processor and pulse to mix in.
Add sour cream, pimentos and herbs, if using, and pulse again to mix.
(If you do not have a food processor, use your blender to mince garlic, jalapeno and herbs, if using. Then transfer mixture to a bowl and combine with remaining ingredients.)
Serve on a platter with assorted grapes, toast squares or crackers. Makes approximately 3 cups of spread.
