Ingredients:
- 1 - room temp dry-aged porterhouse
Directions:
1) Salt the porterhouse aggressively (thick steaks need more)
2) Get skillet hot over medium-high heat (3-4 minutes) then add oil should smoke slightly
3) Place steak in pan and don't touch let it brown crust (4 minutes)
4) Cut steak off bone on cutting board then slice perpendicular to bone (thick 1" slices)
5) Place back in pan reassemble steak so now it is a sliced filet and strip next to the bone. Crust side up
6) Place few pats of butter on steak and place under heated broiler
7) Broil until medium sizzling rare (4-6 minutes). Can check if done since its already sliced
8) serve from pan with buttery sauce dripped over it
