Peppermint Patty Cookies

Ingredients:

  1. 1 packages - Devil's Food Cake Mix
  2. 1/2 cups - shortening
  3. 1 tablespoons - water
  4. 2 - eggs
  5. - powdered sugar
  6. 30 - Borden's or Zachary Thin Mints

Directions:

Preheat oven to 375 degrees. Lightly grease cookie sheet, or line with parchment paper.

In large bowl combine cake mix, shortening, water, eggs and peppermint extract. Mix well. Dough will be very thick.
Shape into 1" balls, roll in powdered sugar and place 2" apart on cookie sheet.
Bake 7-10 minutes, or until edges are set. Immediately place mint in center of cookie, pressing down lightly. Remove from cookie sheet and cool completely on rack.
