Peppermint Creme Brulee

Ingredients:

  1. 3 - whole eggs
  2. 4 - egg yolks
  3. 2/3 cups - sugar
  4. 2 1/2 cups - milk
  5. 1 teaspoons - mint extract
  6. 2 tablespoons - sugar
  7. 1 tablespoons - crushed peppermint candy

Directions:

Preheat oven to 350 degrees F.

Place whole eggs, egg yolks and 2/3 cup of sugar in a large bowl; whisk until smooth.

Heat milk to 120 degrees in saucepan over medium heat. Add to egg mixture in a slow stream, mixing well. Add mint extract.

Pour mixture into your temp-tations 1-quart oven-proof bowl. Cover bowl with foil and bake for 40-45 minutes or until the internal temperature is 170 degrees F. It will still be jiggly.

Remove from oven, uncover and refrigerate for 8 hours or overnight.

To serve, sprinkle with 2 tablespoons of sugar and caramelize under the broiler or with a blow torch. Sprinkle with crushed peppermints and serve.
