Peppermint Cookies

Ingredients:

  1. 1 1/4 cups - crushed peppermints
  2. 1 1/3 cups - sugar divided
  3. 3/4 cups - butter
  4. 2 - eggs
  5. 1 teaspoons - peppermint extract
  6. 3/4 teaspoons - vanilla
  7. 2 1/2 cups - flour
  8. 1/4 teaspoons - salt

Directions:

Grind peppermint candies with 1/3 cup of sugar until powdery with a few larger chunks of candies (this is best done with a food processor). Mix flour and salt in small bowl and set aside.
Mix butter, eggs and remaining 1 cup of sugar together in separate larger bowl. Add in vanilla and peppermint extract. Add flour mixture in 3 parts until well mixed Form dough into small balls, about an inch or so wide. Roll the balls of dough in the crushed candy mixture and place on ungreased baking sheet. Bake for 8 minutes at 350° F. Remove cookies from oven and let cool on baking sheet for 1 minute; then remove them and roll them in the candy mixture once more before place them on a sheet of wax paper to cool.
