Ingredients:
- 4 - tomatoes halved
- 2 - courgettes sliced diagonally
- 4 - large sirloin steaks all visible fat removed
- - sea salt flakes
- 1/2 teaspoons - mixed peppercorns (black, white, green, pink) crushed
- 9 ounces - frozen peas 255 g
- 2 pounds - new potatoes 908 g
- - salt and freshly ground black pepper
Directions:
1. Boil the potatoes for 20-25 minutes until tender. Drain and keep warm.
2. Meanwhile, preheat a large griddle pan. Season the tomatoes and place them cut-side down in the pan with the courgettes. Cook for 10 minutes, turning frequently, until soft. Remove the vegetables and keep warm while you cook the steaks.
3. Season the steaks really well all over with the sea salt and peppercorns. Griddle for 3-4 minutes on each side (for medium-well done). Boil the peas for 3-4 minutes and drain.
4. Serve the steaks with the vegetables, potatoes and a twist of black pepper.
