Pepper Crusted Turkey Breast

Ingredients:

  1. 5 pounds - skin-on turkey breast
  2. 1/4 cups - vegetable oil
  3. 2 tablespoons - kosher salt
  4. 1/2 cups - fresh ground peppercorns

Directions:

Preheat oven or roaster to 325 degrees F. Clean and wash the turkey breast and pat dry with paper towels.

Place the breast on a baking rack in a 9 X 13-inch baking pan, or on a rack in an electric roaster. Completely cover skin with vegetable oil.

Sprinkle a heavy coating of fresh ground black peppercorns to cover the outside of the turkey as completely as possible. Pat on peppercorns where needed.

Roast the breast for 2-2½ hours, or until an instant-read thermometer registers 165 degrees F at the center.

Remove the breast from heat, cover loosely with foil and let rest 15 minutes before carving. (Internal temperature will rise a few degrees while allowing to rest).
