The amount of vodka, cream and black pepper are all really up to individual tastes. I like my sauce this way, but feel free to experiment.

Ingredients:
- 1 pounds - penne pasta
- 2 tablespoons - olive oil
- 1/2 whole - onion diced
- 1/2 cups - pancetta diced
- 1/3 cups - vodka
- 1 cups - tomato sauce
- 1/3 cups - heavy whipping cream
- 1/2 teaspoons - black pepper
Directions:
1. Boil pasta in a pan with a little salt (for flavor) and a dash of olive oil (to stop the pasta sticking together) until al dente.
2. Heat olive oil in a pan over a medium high heat, then add diced onion and cook until onion is soft, about 3 minutes.
3. Reduce heat to medium and add pancetta - heat through for a further 3 minutes.
4. Add vodka to the pan and swirl around to deglaze the pan. Cook until vodka has reduced down.
5. Add the tomato sauce and black pepper and cook until the sauce is piping hot.
6. At the last minute add the cream and stir through until combined.
7. Drain cooked pasta and toss with vodka sauce. Serve immediately.
