Pecan Pralines

  1. 2 cups - sugar
  2. 1 teaspoons - baking soda
  3. 1 cups - buttermilk
  4. - pinch of salt
  5. 2 tablespoons - butter
  6. 2 1/3 cups - pecan halves chopped
  7. 2/3 cups - perfect pecan halves


In a large kettle combine sugar, baking soda, buttermilk and salt. Cook over high heat 5 minutes stirring frequently. Cook to 234 degrees (using candy thermometer).
Remove from heat. Add butter and chopped pecan halves.
Return to heat and cook, stirring continuously 'til soft ball stage is reached. Remove and let stand -- just a minute or two. Then with a spoon, beat until thickened and creamy.
Immediately drop by tablespoons onto wax paper. Dot with perfect pecan halves.
