Ingredients:
- 1/2 cups - finely chopped pecans
- 1/3 cups - fine dry bread crumbs
- 1/2 cups - flour
- - salt and pepper
- 3 - eggs beaten
- 4 - pork tenderloins (6 oz. each)
- 3 tablespoons - olive oil
- 1 pieces - 1-inch fresh ginger peeled
- 1 cloves - large garlic
- 2 - egg yolks at room temperature
- 4 tablespoons - white wine vinegar
- 1/2 teaspoons - salt
- 3/4 cups - peanut oil plus 2-1/2 tablespoons more
- 1 1/2 tablespoons - oriental sesame oil
- 4 drops - tabasco sauce
- 1 - tomato diced
- 1 - green onion chopped
Directions:
Preheat oven to 375 degrees F.
Combine pecans and bread crumbs in shallow pan. Season flour with salt and pepper in another shallow pan. Place beaten eggs in third pan.
Dredge pork in flour and shake of excess; dip into eggs and roll in bread crumbs and nut mixture. Coat thoroughly.
Brown in olive oil over medium heat. Transfer skillet to oven and bake 8 minutes for medium. Cut cross-wise into 1-1/2-inch thick slices. Top with Ginger Mayonnaise.
For Ginger Mayonnaise:
Place ginger, garlic, yolks, vinegar, and salt in food processor and process. With machine running, add both oils slowly; process until thick, then add tabasco. Cover and refrigerate. Add tomato and onion just before serving.
