Ingredients:
- 2 tablespoons - butter
- 1/2 cups - chopped walnuts
- 3 tablespoons - brown sugar
- - mixed salad greens such as romaine, leaf lettuce, Boston lettuce
- 1 - firm ripe pear (Bosc or Bartlett are good choices)
- 3 - scallions chopped
- 3 ounces - to 4 ounces crumbled Blue cheese
- 2 tablespoons - sugar
- 1 teaspoons - dry mustard
- 1/2 teaspoons - seasoned salt
- 1/4 teaspoons - freshly ground black pepper
- 3 tablespoons - balsamic vinegar
- 1/2 teaspoons - onion juice
- 1/2 cloves - garlic crushed
- 3/4 cups - salad oil
Directions:
To prepare Salad:
Melt butter in heavy skillet over medium heat; add walnuts and brown sugar. Saute until nuts begin to soften; remove from pan and cool.
Wash and drain lettuce. Tear into bite-size pieces and place in large bowl.
For Dressing:
Combine dry mustard, seasoned salt and pepper in a small bowl. Stir in vinegar, sugar, onion juice and garlic. Let stand 1 hour. Just before serving, pour through a wire-mesh strainer into a small bowl to remove garlic. Beat in olive oil with a wire whisk, pour over salad and toss.
At serving time, core pear and cut into pieces. Toss lettuce, pear, scallions, walnuts and cheese with Balsamic Vinaigrette. Serve immediately.
