Peanut Butter Fantasy Fudge

  1. 1 cups - chopped dry roasted peanuts optional
  2. 1 teaspoons - vanilla
  3. 3 cups - sugar
  4. 3/4 cups - butter or stick margarine
  5. 5 ounces - evaporated milk 5 oz. = about 2/3 cup
  6. 1 cups - creamy peanut butter
  7. 1 jars - 7 oz. marshmallow creme


Line a 9-inch square pan with aluminum foil, allowing ends of foil to extend over sides.

Place sugar, butter and evaporated milk in large saucepan. Bring to a full rolling boil over medium heat, stirring constantly (takes about 20 minutes). Boil at a full boil for 4 minutes (or until a candy thermometer reaches 234 degrees F), stirring constantly to prevent scorching.

Remove from heat. Add peanut butter and marshmallow creme, stirring until completely melted and combined. Add nuts (if using) and vanilla; mix well.

Pour immediately into prepared pan and spread evenly to cover bottom of pan. Cool at room temperature (or in the fridge) for at least 4 hours.

To prepare this in the microwave, melt butter in 4-quart bowl on high until melted. Add sugar and milk; mix well. Microwave 5 minutes or until mixture begins to boil, stirring after 3 minutes.

Stir well, scraping down sides of bowl. Microwave 5-1/2 minutes, stirring after 3 minutes. Let stand for 2 minutes, then add peanut butter, marshmallow creme and vanilla. Pour into prepared pan as directed and allow to cool.
