Peanut Butter Crisps

  1. 1 cups - butter or margarine
  2. 1 cups - peanut butter creamy or chunky
  3. 1 cups - brown sugar firmly packed
  4. 2 cups - sugar
  5. 2 - eggs
  6. 1 teaspoons - vanilla
  7. 2 1/2 cups - Quaker oats
  8. 1 cups - flour
  9. 2 teaspoons - baking soda
  10. 1/4 teaspoons - salt optional


Heat oven to 350° F. Beat together butter, peanut butter and sugars; blend in eggs and vanilla 'til well mixed.
In another bowl, combine oats, flour, baking soda and salt. Pour dry ingredients into wet ingredients and mix well.
Shape dough to form 1-inch balls and place on ungreased cookie sheet. Flatten balls with fork dipped in sugar to form a criss-cross pattern.
Bake about 10 minutes or until edges are golden brown. Cool 1 minute on cookie sheet before removing to wire rack for continued cooling.
