Peanut Butter Cream Pie

Ingredients:

  1. 3/4 cups - powdered sugar
  2. 1/3 cups - peanut butter
  3. 2/3 cups - sugar
  4. 3 tablespoons - cornstarch
  5. 1 tablespoons - flour
  6. 1/2 teaspoons - salt
  7. 3 - egg yolks
  8. 2 tablespoons - butter
  9. 1 teaspoons - vanilla
  10. 3 cups - milk
  11. 1 - baked pie crust
  12. 3 - egg whites
  13. 1/4 teaspoons - cream of tartar
  14. 1/4 cups - sugar

Directions:

Cream powdered sugar and peanut butter 'til crumbly; set aside.
Combine sugar, cornstarch, flour, salt, egg yolks, butter, vanilla and milk in heavy saucepan. Cook over medium heat, stirring constantly, until thick.
Sprinkle 2/3 of peanut butter mixture in bottom of pie shell; pour custard (cooked above) over this.
Meringue: In mixing bowl, beat egg whites with cream of tartar and slowly add sugar, continuing to beat until stiff peaks form.
Spread meringue over custard, and sprinkle remaining crumb mixture over meringue. Bake at 350° Fahrenheit for 15 minutes.
