Peanut Butter and Jelly Muffins

Ingredients:

  1. 2 cups - flour
  2. 1/2 cups - sugar
  3. 2 1/2 teaspoons - baking powder
  4. 1/2 teaspoons - salt
  5. 3/4 cups - crunchy peanut butter
  6. 3/4 cups - milk
  7. 2 - eggs
  8. 1/4 cups - jelly

Directions:

Grease muffin cups. In large mixing bowl, combine flour, sugar, baking powder and salt. Mix well.

Cut in peanut butter until mixture resembles coarse crumbs. Add milk and eggs, stirring just until moistened.

Place 1/2 the batter into prepared muffin cups (about 2 tablespoons per cup). Place 1 teaspoon jelly in center of batter in each cup. Top with remaining batter.

Bake 15 to 17 minutes in 400 degree F oven.
