Peach Melba Crisp

Ingredients:

  1. 1/2 cups - flour
  2. 1/4 cups - sugar
  3. 1/2 cups - packed brown sugar
  4. 3 tablespoons - chilled butter cut into pieces
  5. 6 cups - sliced peeled peaches
  6. 2 teaspoons - lemon juice
  7. 1 cups - raspberries or blueberries
  8. 1 tablespoons - sugar
  9. 1 tablespoons - cornstarch
  10. 1 tablespoons - seedless raspberry or blueberry jam melted

Directions:

Preheat oven to 375 degrees.
Combine flour, 1/4 cup sugar and all of brown sugar. Cut in butter with pastry blender until appearance is like coarse meal; set aside.
In another bowl, combine sliced peaches and lemon juice. Toss gently to coat. Add berries, 1 T. sugar, and cornstarch. Toss gently.
Spoon fruit into 8-inch square baking dish that has been coated with vegetable spray.
Drizzle jam evenly over fruit mixture. Sprinkle with flour and sugar mixture.
Bake at 375 for 45 minutes or until top is browned.
